2 Senkada Kandy Black Tea bags
2 whole Ceylon cloves
4 cardamom pods, bruised
4 oz. freshly boiled water
2 tsp. local honey
4 oz. Gin – We recommend Leopold Brothers Navy Strength American Gin
6 oz. tonic water
Mint Sprig, crushed between fingers
Combine teabag and spices in a small teapot and pour hot water over to cover. Steep for 5 minutes and discard teabag.
Add honey to taste and allow to cool to room temperature. Discard spices.
Add ice to a cocktail shaker and pour infused tea.
Add the gin and vigorously shake it between 7-10 seconds.
Pour into 2 cocktail glasses and add a splash of tonic water.
Add mint and serve.
